Recipe: Brocolli, Cauliflower & Toasted Seeds Salad

Start the year the healthy way with this super delicious ‘almost’ raw recipe! My boyfriend and I call this salad ‘the crack’ as it is so addictive. Once you start eating it, you just can’t stop.

Who would have thought that raw broccoli and cauliflower combined with toasted seeds and mayonnaise would be so delicious?! So a super healthy recipe, that’s quick, easy to make, AND delicious…yes it is possible. You are welcome!

Wee tip: For this recipe you can buy vegan mayo (check the free from section of your supermarket) or you can make your own. There are a lot of recipes available online. I like the one from “Oh She Glows”.

Ingredients

1 medium broccoli

1 medium/small cauliflower

A handful of sunflower seeds

A handful of pumpkin seeds

A handful of Pine nuts

Vegan mayo

 

Method

1. Shred broccoli and cauliflower in food processor and put in a big bowl.

2. Put seeds in pan without oil and toast them for a few minutes then add the pine nuts. The reason why you should toast the seeds first is that they take longer to toast than the pine nuts. Keep an eye on them as they can burn quickly.

3. Once toasted put the seeds and nuts in the bowl with the broccoli and cauliflower.

4. Add some vegan mayo (not too much) and mix well.

5. Eat and enjoy!
